Potato Serrano Ham Loaf

Ingredients:

3 Yukon Potatoes

Serrano Ham 4 to 6 slices

1/2 white onion

1 tsp. fresh thyme

3 whole eggs

1 1/2 cup heavy cream

1 cup grated Parmesan Cheese

pepper and salt to taste

Directions:

Peel the potatoes and slice thinly using a mandolin. Same with the white onion,

Greased a loaf pan with some butter and use a parchment paper for the bottom of the pan.

Start with two layers of potatoes follow by some onions, sprinkle some salt and pepper and some serrano ham. Keep doing layers of single potatoes until you finished all the potatoes.

In a bowl mix the 3 eggs with the cream and the rest of the cheese and pour over the potato loaf.

Place in a pre heated oven at 350 F for 45 minutes. Let it rest before cutting it.o
