Guava Yogurt Flan

Ingredients

5 medium size fresh guavas

1 lemon

1/3 cup of tab water

1/2 cup caster sugar

2 cups heavy cream

2 cups greek yogurt

2 gelatin Knox envelopes

1/4 cup cold water to dissolve gelatin

zest of half a lemon

1 cinnamon stick

Procedure

Peel three guavas and cut in quarters and place with 1/3 of water and the 1/2 of sugar in a pot to simmer for 20 minutes until the pulp of the guava gets soft. Later transfer to a blender to obtain a guava puree. Place the puree in a colander to get the seeds out and set aside.

in another pan add heavy cream, sugar and the lemon peel of half a lemon with the CINNAMON stick to aromatize cream in simmer until the sugar is disolved. Leave it to cool down. Get the lemon peel and stick out.

In a medium size bowl add 2 cups of plain greek yogurt, add guava puree and heavy cream and mix well so that the cream and yogurt integrates.

In a small cup dissolve 2 packages of Knox gelatin with 1/4 of cold water and mix well to dissolve the powder.

Add gelatin to the yogurt cream mixture and mix really well until everything is incorporated.

Cut the rest of guavas into thin layers and squeeze lemon juice over them and sprinkle with 1 spoon of sugar.

In a baking rectangular pan covered with cling film wrap place star placing guava rounds in the bottom and around the walls of the pan.

Pour yogurt cream mixture over the guava slices and cover well with cling wrap.

Place in the fridge for at least 6 hours or better from one day to the other.
